Soup is one brilliant use of Pigs Brains, they give a lovely flavour, but they are also great cut into chunks, tossed in seasoned flour and chopped sage then fried in butter. All you need to do from there is pop them on toast. Hugh Fearnley-Whittingstall was on to a good thing when he created that recipe!
