Have you ever tried Goose? It's fantastic. A really rich and succulent meat with a mouthwateringly distinctive flavour. If you like dark poultry meat, and only wish it could get darker, goose is for you. It has a lot more fat than other poultry, resulting in a more flavorful meat that doesn't dry out.
Our geese graze over large grass paddocks, and are fed on natural diet without any additives, hormones or growth promoters. The secret a succulent bird is to allow it to mature gently. Be aware of the fat when cooking and place your goose on a rack so it's not bathing in the juices.
