Offally good, just give it a go
At WCF we feel that no animal part should go to waste and that, as the saying goes - "you can eat all of the pig except the squeal". As well as being economical, this attitude demonstrates a respect to the animal and the traditional way it has been reared.
Offal is a great source of protein and very valuable nutritionally. In most parts of the world it is considered a delicacy, and best cooked simply for the best result. As TV Chef Valentine Warner says - "I would rather eat tripe from a good cow than sirloin from a poor cow."
