A whole Guinea fowl ready prepared for the oven. It has a lovely flavour somewhere between chicken and pheasant which is great roasted or jointed and casseroled. Try casseroling in red wine with chestnuts. In season from September to February, supplied frozen when out of season. One bird will serve two people and averages about 3lbs (1.3kilos).
