A type of Cypriot cheese made from a mixture of sheep and goat milk with a slightly salty flavour. It has a high melting point allows it to keep its form well when cooking and is perfect for grilling or frying. Halloumi is often used as a meat substitute in vegetarian dishes for its wonderful texture as well as flavour.
