The lamb equivalent to fillet steak, lamb cannon is a premium, boneless cut. It is made from half of the loin side of lamb, which we trim and roll. This creates a lean, flavoursome cut that is easy to roast and slice.
The best way to cook lamb cannon is to seal it all over in a hot skillet. One browned and lightly caramelised, put the skillet in the oven and roast to your liking. Baste with herbs and butter, check seasoning and allow to rest. Serve with a rich gravy, wilted spinach and roast potatoes for a show-stopping meal.

Lamb cannon is vacuum-packed, which keeps it fresh for longer and makes it suitable for home freezing. Make sure that you defrost the meat slowly and thoroughly before cooking. The easiest way is simply to leave in the fridge overnight.

Grill Method:
Preparation: Remove the lamb cannon from the fridge 30 minutes before cooking to bring it to room temperature. This ensures even cooking and tenderness.
Seasoning: Rub the lamb cannon with olive oil, sea salt, and freshly ground black pepper. A simple seasoning will allow the natural flavours to shine.
Preheat the Grill: Preheat your grill or pan to medium-high heat. Achieving a perfect sear is key to a beautifully cooked lamb cannon.
Cooking: Grill the lamb cannon for 4-5 minutes on each side for a medium-rare finish. The lamb should be tender and juicy, with an internal temperature of 52-54°C.
Resting: Let the lamb rest for 5 minutes under foil to retain its juices and enhance the flavour.
Serve: Serve the lamb cannon with mint-infused mashed potatoes and sautéed green beans for a refined and gourmet meal.
Oven Method:
Preparation: Preheat your oven to 200°C (180°C fan) or gas mark 6. Allow the lamb cannon to reach room temperature before cooking.
Seasoning: Rub with olive oil, salt, and pepper to prepare for searing.
Searing: Sear the lamb cannon in an ovenproof pan for 2-3 minutes on each side until browned.
Oven Cooking: Transfer the pan to the oven and cook for 8-10 minutes for medium-rare. The lamb should be tender and juicy.
Resting: Rest the lamb for 5 minutes under foil.
Serving: Pair with mint-infused mashed potatoes and sautéed green beans for a sophisticated dish.

Storage Instructions
To maintain the freshness and quality of Lamb Cannon, it is recommended to store it in the refrigerator at a temperature of 32°F to 40°F (0°C to 4°C). Place the lamb cannon in an airtight container or wrap it tightly in plastic wrap to prevent any exposure to air or odors. Stored correctly, the Lamb Cannon can maintain its freshness for up to 2-3 days. If you plan to store it for a longer period, you can also freeze the lamb cannon. Wrap it tightly in plastic wrap and aluminum foil or place it in a freezer-safe bag or container. Frozen Lamb Cannon can retain its quality for approximately 2-3 months. When ready to use, thaw the lamb cannon in the refrigerator before cooking.

Better still, reuse them by storing in the freezer and chilling other products. The only component from our packaging that can’t be recycled are the foil liners which need to be go in household waste; the poly bags meat comes in needs to go in plastic recycling.
