A joint taken from the belly of the pork which is a bit more fatty than other choices but particularly great for flavour and producing a crispy roast. The fat will keep the joint very moist as it roasts and will caramelise for a great depth of flavour. An affordable pork joint for feeding a crowd. Cook low and slow.
